3 cups. cooked rice
2 eggs, beaten
3 T. minced green onions or
onion
0.25 1b. (150g) shelled shrimp,
ham, sausage or ground
meat
1 cup. mixed vegetables, diced
0.5 t. each salt, sugar
1 T. soy sauce
dash of pepper Method: 1. Heat 4 T. oil then stir-fry eggs until cooked. 2. Add
green onions and stir- fry until fragrant; add shrimp and stir-fry until
cooked. Add mixed vegetables, rice, and salt, sugar, soy sauce and dash of
pepper; stir- fry until rice is hot and all ingredients are mixed well, about 3

How to cook Rice

How to Cook Rice

Shanghai white rice

Rinsing rice helps get rid of any starch and impurities.
Rinse until the water is clear and not cloudy.

 

 

 

 

 

 

Combine long grain rice and water.

 

 

 

 

 

 

Boil the Rice

Bring the rice to a boil, uncovered, at medium heat

 

 

 

 

 

 

 

Turn Down the Heat, Place the Lid at an Angle

 

 

When the rice is boiling, turn the heat down to medium low.
Place the lid on the pot, tilting it to allow steam to escape.

 

 

 

 

 

Look for “Craters”

 

 

 

 

After the rice has been cooking for a few minutes, check for
holes or “craters.”

 

 

 

Put the Lid on Tight

 

 

 

 

When you can see the holes or craters, put the lid on tight.
Turn the heat down to low.

 

 

 

 

Simmer, Fluff and Serve

 

 

 

 

 

Simmer the covered rice for another 15 minutes. Fluff it up
with a fork and serve hot.
