Tea eggs — cha ye dan (茶叶蛋) — have long been a popular savory snack in China.

How to make the perfect Shanghai egg

One reason these eggs have become so popular throughout China is that they are as inexpensive as they are delicious.

Fermeated Eggs”Tea Eggs”

10 chicken eggs
1 sliced tomato
Egg Spicing Ingredients:
1 star anise seed
1 small slice cassia bark
1.5 T. red tea (The above ingredients are packed in a white cloth bag which is sealed at the mouth.)
4 c. water
2 t. salt
1 T. dark soy sauce
1 t. sugar

0.25 t. five-spice powder Method: 1. Put the chicken eggs in cold water to
bring to boil over mild heat for 5 minutes, take them out to soak in cold water
to cool and crack the shells of the eggs by knocking. 2. Boil the bag of spices
in water for 20 minutes, take it out, add the remaining seasonings and cracked
chicken eggs to boil for 5 minutes and soak in the wok for 10 hours without lifting
the lid. 3. Place the chicken eggs in a plate and garnish with tomato slices
for serving.
Remember, the more cracks, the cooler the design will be.

    I tried some of the recipes and the food tatse great.  The Shanghai dishs are very very good.  I hope to go to Shanghai this summer.

    This tea egges taste so good. For more flavor I used a pin and pushed it all the way thru then the flavor gos thru the whole egg. Shanghai food recipes are pretty good. I am trying the others now.

    This is a very good recipe.  The kids loved the eggs.  Do you have other Shanghai food finger food recipes.  I see your sites has many Chinese food recipes but usually for main course.  I am looking for more recips that I can make for the kids!  many thnks!

    It’s a very good recipe.  I used Lipton tea bags and it came out very very nice.  You need to use 6 of them.  The more you use the better the flavor!

    The eggs are great.  the recipe is simple, I tried different teas, I used Earl greay and the flaor was not that strong.  The needle thru the eggs makes the yolk very moist not bad.  The kids love the eggs.

    It’s actually served better in a bowl with lots of them together and watch them peel it away.  They all think it’s a marble egg or an egg made from stone.  Kids love it!

    This is a great tea egg recipe.  My kids really liked it.  I thought it was a great idea to try it using curry.  It failed, the curry is to think and the flavor did not go in, instead it burned.  I thiought it was a good idea.  I can not wait to try your other Shanghai food recipes.  Many Thanks.

    You can get a plastic egg box, so when your finished with the egg just peel when hot and you can make square marble eggs,. It was a hit at my party. I tried the Shanghai fried wontons too very very good. Do you have a recipe for a dipping sauce.

    the recipe is good, it tatses just like the ones I had in Shanghai. Well, on the streets of Shanghai sold by the little old Shanghai lady!

    I tried the recipe and it worked great. I used Lipton tea bags but I used 4 of them. I find that the loner you leave it in the tea the darker and better looking the eggs are.
